If you use purple potatoes you are in for a treat. If you don’t there still won’t be any left!
2 Sweet Potatoes (Purple are yummy!)
Slice them French fry style. We like to cut them similarly and on the thinner side so that they are crispier.
Store, label and refrigerate.
Preheat Oven to 450 degrees
Spread out on a parchment paper lined baking sheet. Spray lightly with your cooking oil of choice. I used Coconut since it is what I had on hand. Sprinkle with salt.
Place sheet in oven and cook for 15 minutes. Remove from oven and flip over. Cook an additional 10 minutes then turn off oven. Let sit in turned off often for 5 to 10 minutes.
